Can I use the VulkanUS to sharpen a knife with a serrated blade?

Certainly! Hold the knife horizontally and turn it with the bevel towards the sharpening insert.

Can I use the VulkanUS to sharpen a single-bevel Japanese knife?

Also no problem! Do the same as for a knife with a serrated blade.

And what about a double-bevel Japanese knife?

The process is the same as for classic knives.

I have a ceramic knife. Can I sharpen it with the VulkanUS?

No, definitely not! These knives are made of a very hard and delicate, brittle material. You would damage both your knife and your VulkanUS. Take the knife to a professional sharpening service.

Why is sharpening with the VulkanUS completed within seconds?

The sharpening inserts are made of a hard metal with a very high level of hardness (around 93 HRC). As this is not a ceramic material, it is still tough enough not to be sensitive to shocks. With these properties, it is ideally suited to removing material to create smoothness both very quickly and gently.

Which bevel angle can I achieve with the VulkanUS?

When closed, the sharpening insert has an angle of 11° from vertical. This changes, depending on the depth to which the blade is pushed into the VulkanUS during sharpening. The maximum is 21°

Which bevel angle can I achieve on a knife with a serrated blade or a single bevel?

The angle here is also in the range of 11° – 21° from vertical.

How many times should I draw the knife through the VulkanUS?

We recommend checking the blade sharpness after approx. 4 draws and repeating the process if necessary. You will then achieve optimum sharpness with minimal wear on the blade.

Where should I hold the VulkanUS during sharpening? Where should I put my other hand?

Hold the VulkanUS on the top edge and ensure that no fingers or other body parts are sticking into the opening. See the illustration in the handbook.

I have to draw my knife through the VulkanUS many times to get it sharp. Why?

The cutting edge shifts towards the back of the knife each time it is sharpened. As the blade becomes thicker, more and more material has to be removed. When the cutting area is used up, have it ground again by a sharpening service.

There are knife sharpeners coated with diamond dust. What do you think of them?

We do not recommend them. The diamond dust coating acts like sandpaper and leaves a rough cutting edge, which wears more quickly. In addition, you will
need to use different tools for different processes, such as repairing, sharpening and polishing. That takes more time, especially if the tool inserts have to be changed. You would achieve a truly smooth cutting edge only with a very fine polishing insert and a lot of time.

And the classic sharpening steel?

Even with the daily training undertaken by chefs and butchers, you will never achieve the consistent bevel quality of the VulkanUS. In addition, the sharpening steel only straightens the cutting edge; it is hard to “sharpen” a blunt knife with it.

There are special whetstones too. What about those?

Here too, you need a lot of experience for an optimal result. The many whetstone types and methods will not make it easy for you. In any case, this is a time-consuming process.

Why do other sharpeners have a fixed bevel angle?

These sharpeners are technically of the simplest nature and do not handle your knife particularly carefully. With its variable bevel angle, the patented VulkanUS guarantees an optimum balance between result and gentle handling of your precious knives.

What is the best way to look after my VulkanUS?

Sharpen only clean knives. Grease acts like a lubricant and makes sharpening more difficult. Regularly clean the filings from the VulkanUS with a damp household sponge. In rare cases, e.g. in the event of contamination with food residues, cleaning in the dishwasher may be necessary.

Do I need to do anything further to my knife after sharpening?

Clean off any metal filings stuck to the knife.

How long do the sharpening inserts last? Are spare parts available?

If used properly, the sharpening inserts will last for several years. They can be replaced easily with a spare parts set available from specialist retailers.

What should I do if I don’t get on with the VulkanUS?
